In each of these journal entries, we want to give you the opportunity to get to know our partners a little better. Each of our NuMi partners bring, not only their professional skill, but also a unique perspective on what it means to be a healthier, happier you.
We’re thrilled to introduce you to Clair, our home cook consultant! With a career in, out and next to commercial kitchens and hospitality Clair has vast experience working with food and sourcing excellent ingredients. Alongside her professional career, with 4 kids, Clair knows her way around feeding a small army – so has provided NuMi with brilliant ‘home-cook’ insights to make sure our bespoke recipes are all; delicious, nutritious and accessible to home cooks.
A Potted History
Clair has worked as a professional chef and hospitality business owner for more than 2 decades – including Holt’s very own Byfords – and with it brings lots of valuable insights and experience to our NuMi team. Putting together great tasting dishes, understanding flavour – but also the practical elements like cost and ingredient accessibility is second nature for her. Being able to lean into this knowledge has left a marked stamp on our NuMi recipe book.
Home-cook Insights
Alongside her professional experience she also has excellent insight making meals for ‘all the family’ with tips, hacks and hints to bulk, batch and adapt meals to fit in with a busy schedule. We call this “The Clair Flair”. Below are two of Clairs favourite recipes she loves to make and eat at home.
Nutty Granola
If you have time, when you first make your own granola, we recommend weighing out the ingredients for just one serving (as listed below) this way you can easily see exactly how much you should be having for a balanced breakfast.
Ingredients For One Serving
1 tbsp Mixed Nuts
1 tbsp Desiccated Coconut Coconut
1 tbsp Sunflower Seeds (or any mix of seeds)
1 tbsp Avocado Oil
1 tbsp Maple Syrup
40 grams Oats
1/8 tsp Cinnamon
1/8 tsp Sea Salt
1/8 tsp Vanilla Extract
Ingredients For Four Servings
4 tbsp Mixed Nuts
4 tbsp Desiccated Coconut Coconut
4 tbsp Sunflower Seeds (or any mix of seeds)
4 tbsp Avocado Oil
4 tbsp Maple Syrup
160 grams Oats
1/2 tsp Cinnamon
1/2 tsp Sea Salt
1/2 tsp Vanilla Extract
Method:
Pre-heat oven to 150ºC and line a baking sheet with baking paper.
In a mixing bowl combine all ingredients. Spread out on the baking tray.
Bake for 10 minutes and then stir. Bake for another 5 minutes until toasted and golden brown.
Allow to cool completely and store in an airtight container for up to 2 weeks.
Banana Bread Recipe (For 10 Servings)
A proper, bonafide, absolute family favourite for Clair! This recipe hits the brief for all ages and is a great snack to keep blood-sugar up and help prevent ‘crashes’ throughout the day. All in this recipe only takes 45 minutes to prepare; including the washing up!
Ingredients:
20 grams Extra Virgin Olive Oil
200 grams Walnuts (2/3 ground, 1/3 chopped)
100 grams Almonds (ground)
2 tsps Baking Powder
2 Banana (large, very ripe)
3 Egg
25 grams Honey
1/4 tsp Cinnamon (or to taste)
1/4 tsp Nutmeg (or to taste)
1 tsp Vanilla Extract
Method:
Pre-heat the oven to 175 degrees.
Put all in a blender/food processor apart from the chopped 1/3 walnuts
Line a loaf tin and add batter, top with the chopped walnuts
Bake for 30-35 minutes or until a knife comes out clean.
